Have you ever wondered where the “Lotus” on these delicious cookies comes from? Us too! Biscoff cookies are made at Lotus Bakeries in Belgium that was founded in 1932. Although we refer to them as Biscoff cookies here in the United States, many parts of Europe refer to them as “Speculoos”.

Equipment
- Blender or Ninja Nutri Blender
- Ice Cream Scoop
- Coffee Brewing System
Ingredients
- 3 large scoops vanilla ice cream
- ½ cup Kawfee & Sugar Granny Brew Coffee strong brewed, chilled
- 10 biscoff cookies crumbled
- whipped cream optional
- additional crumbled cookies for garnish optional
Instructions
- Add all ingredients to a blender and blend for 30 seconds until smooth. Top with whipped cream and crumbled cookies if desired.
