Breakfast Flatbread with Eggs, Leeks, and Bacon

We have to admit that breakfast is definitely our favorite food group! Who says that it can only be served during a certain time of the day? Breakfast for dinner is quite possibly one of the best things to enjoy. In fact, the flavors of breakfast are so good, that we let those flavors spill over into our brunches on the weekends! Breakfast Flatbread with Eggs, Leeks, and Bacon is a great way to combine fabulous breakfast flavors with the fun of a pizza brunch!

We used Wewalka refrigerated pizza crust for this recipe. It is usually found in the cooler section of your grocery store where the cheeses and canned biscuits are kept. It varies by location however. Other pre-made pizza crusts can be used, but we prefer the classic flavor of Wewalka as a good base. The flavors of all of the toppings should be the star of this brunch spectacle! Eat fabulously y’all!

Ingredients

  • 8 oz thick cut bacon sliced into 1" pieces
  • 1 leek
  • 10 eggs whisked
  • 2 oz goat cheese
  • 1 tbsp olive oil
  • 14.1 oz Wewalka classic pizza dough
  • white truffle infused olive oil for serving
  • salt and pepper as needed

Instructions

  • Preheat oven to 425°F.
  • In a large nonstick skillet, cook bacon for 8-10 minutes over medium heat until fully brown and starting to crisp. While the bacon is browning, prepare the leek by cutting off the root end and dark green parts of the leek. Slice the leek in half, rinse, and slice into ½" pieces. Set aside.
  • When the bacon is done cooking, transfer to a paper towel lined plate and set aside. Drain the bacon grease from the skillet, reserving about 1-2 tbsp. Add the prepared leeks and saute for 7-9 minutes until beginning to soften. When the leeks have softened, set aside with the cooked bacon.
  • Add the whisked eggs to the nonstick skillet and scramble.
  • While the eggs are cooking, unroll the pizza dough onto a nonstick baking pan. Brush with 1 tbsp olive oil and bake in the oven for approximately 15 minutes. Then, remove the crust from the oven and top with scrambled eggs, leeks, bacon, and crumbled goat cheese. Return to the oven and bake for an additional 15 minutes.
  • If desired, sprinkle each slice of the breakfast flatbread with white truffle infused olive oil (so yummy). Eat fabulously!

Easy Weeknight Garlic Ginger Pork Tenderloin

Pork tenderloin is probably one of the easiest main dishes that can be made during the week. Not only does it take very little time to cook, but it’s also easy to enhance with different flavors. Easy Weeknight Garlic Ginger Pork Tenderloin is full of Asian inspired flavors. Crushed garlic, grated ginger, and soy sauce are always a great combination for neutral proteins. This marinade would also work great with diced chicken breasts or chicken thighs as well! One key ingredient that you definitely don’t want to leave out of the marinade is the sesame oil. Just a little bit of this flavorful oil will definitely give it that extra flavor boost that takes the dish over the top. However, be careful not to marinate the pork tenderloin for too long. Although it won’t hurt the flavor, too much time in the marinade will cause the meat fibers to break down too much. Remember to just keep seasoning and stay fabulous, y’all!

Ingredients

  • 2 inch lemongrass cut in half lengthwise
  • 6 cloves garlic peeled and crushed

  • ½ cup extra virgin olive oil
  • ¼ cup soy sauce
  • 1 tbsp sesame oil
  • ½ tsp crushed red pepper

Instructions

  • In a medium mixing bowl, combine lemongrass, garlic, green onions, olive oil, soy sauce, sesame oil, and crushed red pepper.

  • Place the pork tenderloins in a one gallon storage bag that can zip shut. Pour the marinade in with the tenderloins and seal shut, removing any excess air. Allow to marinade in the fridge for at least 4 hours up to overnight.

  • Preheat oven to 400°F. Remove the pork tenderloins from the marinade and place on a baking sheet lined with parchment paper. Roast the pork tenderloin for approximately 20-25 minutes until it reaches an internal temperature of 145°F. Remove from oven, cover with aluminum foil, and allow to rest for at least 5 minutes before slicing.

The holidays are officially here! We have to be honest though. Our holiday tastebuds have been waiting for months now. We have to be completely honest with you. We don’t always eat a lot of salads around our house. However, when we do want a good salad, we always go directly for the Caesar salad dressing! Full of creamy garlic flavor, Caesar salad dressing is actually a lot easier to make than you would think. Minced garlic, freshly squeezed lemon juice, and full flavored mayonnaise are a few of the key ingredients. There is one ingredient that might throw you off just a little bit…anchovy paste. However, don’t be fooled by the name. Anchovy paste is full of delicious briny flavor that is essential for this dressing. It’s possible to use fresh anchovies, but we like to use the paste since it stays fresh in the fridge. Anchovies are also a great ingredient for adding to your favorite tomato sauce to give it a little bit of that umami boost! There’s something truly fabulous about foods that are both spicy and sweet! These Instant Pot Sriracha Meatballs are the epitome of this amazing flavor combination. Cool weather season is finally here! For us that means a few things. Sweater weather, pumpkin flavored everything, and stews! Easy Weeknight Beef Stew is definitely the ultimate choice when it comes to cool weather comfort food! What makes this delicious even more comforting…it’s so easy to make! Seared pieces of beef cooked alongside hearty pieces of potatoes and carrots in a rich broth will make the entire family happy this season. We prefer to use Yukon Gold potatoes in this recipe since they tend to hold up better under longer cooking conditions. However, any potato will work as well. If the potatoes happen to break down a little in the cooking process, it will just thicken it up even more. The key ingredient that we highly recommend using though is a decent quality red wine. We used a Cabernet Sauvignon that is rich and full bodied. However, since you only need to add a cup to the stew, that leaves you with a few glasses to enjoy WITH your meal!   • 3 tbsp extra virgin olive oil
  • 1 yellow onion diced
  • lbs beef stew meat
  • lbs Yukon Gold potatoes peeled and diced into 1" pieces
  • 8 oz peeled baby carrots chopped into ½" pieces
  • 4 cups beef stock
  • 1 cup red wine
  • 1 tsp dried thyme
  • 2 tsp kosher salt
  • 2 tbsp Worcestershire Sauce
  • ¼ cup cornstarch

Instructions

  • In an enamel coated cast iron dutch oven, heat 2 tbsp olive oil over medium high heat. Season the stew meat with salt and pepper. Add the meat to the hot oil and sear on all sides. Transfer to a bowl and set aside.
  • In the same pot, add the remaining 1 tbsp olive oil. Add the onions and cook for approximately 5 minutes until translucent. Return the seared beef to the pot. Add the diced potatoes, carrots, beef stock, wine, dried thyme, salt, and Worcestershire Sauce. Bring to a boil. Reduce heat to medium-low. Cover and simmer for 45 minutes.
  • Mix ¼ cup cornstarch with ¼ cup water. When completely blended, add the cornstarch "slurry" to the beef stew while stirring. Continue to cook the stew for an additional 10-15 minutes. Season to taste with additional salt and pepper if desired. Remove from heat and enjoy!

  • 2 lb lean ground beef

  • 8 sheets phyllo dough thawed
  • 4 tbsp butter
  • ¼ tsp turmeric powder

Instructions

  • Preheat oven to 375°F.
  • In a large nonstick skillet, brown the ground beef until it is cooked completely. Drain the grease from the beef and return to pan.
  • Add beef stock, diced potatoes, scallions, diced jalapeño, allspice, 2 tsp curry powder, dried thyme, 1 tsp kosher salt, and bay leaf. Stir all ingredients together. Cover and cook over medium heat for 15-20 minutes until the potatoes have cooked all the way through. Sprinkle the mixture with flour and stir to combine. Remove from heat and transfer the ground beef mixture to a 13×9 casserole dish.
  • To make the puff pastry topping, melt 4 tbsp unsalted butter in the microwave. Add curry powder, turmeric, and a pinch of salt to the melted butter. Stir to combine. Add one sheet of pastry at a time. Using a pastry brush, brush each layer of dough with the butter. Continue doing this until you have added 8 layers of phyllo dough.
  • Place in the oven on the middle rack and bake for 30 minutes.

It’s not often that our sweet tooth kicks in, but this recipe was just too good not to try. Also, it’s incredibly easy to make! Pumpkin Cinnamon Toast Treats are a variation of the classic Rice Krispy Treats that we all know and love. However, our recipe infused the fall flavors of pumpkin, cloves, and other ingredients that accentuate those delicious fall flavors! Having canned pumpkin puree on hand is always a great idea! This recipe only requires a portion of what typically comes in canned pumpkin puree. However, the leftover puree can be used in other recipes as well, like Instant Pot Pumpkin Curry with Chicken.   • 10 oz marshmallows

Skillet Bacon Cornbread

  • ¼ cup vegetable shortening
  • 1 cup cornmeal
  • 1 cup flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • 1 tbsp sugar
  • 2 eggs
  • cups buttermilk
  • 1 cup cooked bacon crumbled
  • ¼ cup green onions sliced

Brown Butter Honey Glaze

  • ½ cup unsalted butter 1 stick
  • ¼ cup honey
  • ½ tsp salt

Instructions

To Make the Skillet Bacon Cornbread

  • Preheat oven to 400°F. Place a cast iron skillet with vegetable shortening in the oven while it is preheating.
  • In a large mixing bowl, stir together corn meal, flour, baking powder, baking soda, salt, and sugar. Add eggs and buttermilk, whisk to combine. Then, stir in cooked bacon and green onions. Mix until all ingredients are thoroughly combined.
  • When the oven has preheated, carefully removed the cast iron skillet and melted vegetable shortening from the oven. Pour the cornbread mixture into the skillet and place back into the oven. Bake for 25 minutes until golden brown on top.

To Make the Brown Butter Honey Glaze

  • In a medium nonstick saucepan, melt 1 stick of butter over medium heat. After the butter has melted completely, whisk continuously until the butter starts to turn a golden color and develops a nutty aroma (See Note Below).
  • Add the honey to the brown butter and whisk until the honey has melted and the mixture has emulsified. Serve the brown butter honey glaze over slices of hot cornbread. Stay fabulous!

Notes

When making brown butter, the browning process happens pretty quickly.  As soon as it takes on a dark golden color and develops a nutty aroma, remove from heat and continue to whisk so as not to burn the butter.

The air keeps getting cooler around our neck of the woods. Therefore, we’re getting deeper into soup season in our house! In our opinion, one of the easiest and most flavorful soups that you can make is a hearty bowl butternut squash soup. In our recipe we decided to kick up the flavor with spices that you would normally find in a bowl of chili. However, the spice flavors transfer beautifully into the silky butternut flavors. Chili Spiced Butternut Squash Soup with pan fried croutons is definitely filling enough to serve as an entrée. However, smaller bowls of this soup can be served as a delicious appetizer as well. There’s one thing in this recipe that we really don’t suggest skipping. The pan fried croutons are easy to make, and they add fresh flavor and crunch texture to the soup! Ingredients

Butternut Squash Soup

  • ½ yellow onion diced
  • 1 butternut squash peeled, seeded, & diced
  • 4 cups vegetable stock
  • 2 tsp chili powder
  • 1 tbsp sugar
  • 1 tsp cumin
  • ½ tsp black pepper
  • 1 tsp kosher salt
  • ¼ tsp ground coriander
  • ¼ tsp ground nutmeg
  • 1 bay leaf
  • ½ cup sour cream

Pan Fried Sage Croutons

  • leftover crusty bread cut into 1" cubes
  • ¼ cup extra virgin olive oil
  • 5 fresh sage leaves chopped
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

To Make the Soup

  • In a large pot, add diced onion, butternut squash, vegetable stock, chili powder, sugar, cumin, black pepper, salt, coriander, nutmeg, and bay leaf. Bring to a boil and reduce heat to medium low. Simmer, covered, for 45 minutes.
  • After cooking, carefully remove the bay leaf from the pot. With an immersion blender*, blend all of the ingredients in the pot until smooth. Stir sour cream into the soup. Season to taste with additional salt as needed.
  • Set soup aside until the croutons have been prepared.

To Make the Pan-Fried Sage Croutons

  • Heat olive oil in a cast iron skillet over medium heat. When the oil is hot, add the bread cubes, chopped sage, salt, and pepper. Cook, stirring occasionally, for approximately 10 minutes until the bread starts to become toasted on the outside. Serve the croutons on top of the soup. Enjoy!

Notes

A countertop blender can be used in place of an immersion blender.  However, make sure not to fill the blender more than half full before blending.  The hot contents of the soup will expand slightly while blending.

Fall is here and it’s definitely maple season in our house! Also, holiday season is right around the corner, so we’ve been playing around with some different desserts. Sweet and Creamy Biscoff Maple Cream Pie is definitely a delicious and decadent dessert that is a real crowd pleaser! Also, it doesn’t hurt that it requires very little baking. Most of the time that goes into this recipe is waiting for the pie to chill in the refrigerator. Therefore, a little patience is required. It’s definitely worth the wait though. Rich and creamy sweetened condensed milk is combined with pure maple syrup for a delectable treat! Also…LOTUS BISCOFF COOKIES! Is there anything that these little cookies don’t taste delicious with? The sweet gingerbread flavor blends perfectly with down home maple syrup flavors! For a little extra pizzazz, drizzle with some extra pure maple syrup. Hope you enjoy! Ingredients

  • 14 oz sweetened condensed milk
  • cup pure maple syrup plus extra for drizzling
  • pinch of salt
  • 1 deep dish pie shell baked according to package directions
  • 20 Lotus Biscoff cookies
  • 1 cup heavy whipping cream
  • ¼ cup confectioner's sugar
  • 1 tsp vanilla extract

Instructions

  • In a medium nonstick saucepan, combine sweetened condensed milk, maple syrup, and a pinch of salt. Heat over medium heat, stirring frequently to keep the mixture from burning. Cook for approximately 3-5 minutes.
  • Pour the maple cream mixture into the pre-baked pie shell. Allow to cool in the refrigerator for at least 3 hours.
  • Meanwhile, crush half of the Biscoff cookies in a sealed gallon storage bag. Sprinkle the cookie crumbs over the top of the chilled pie.
  • In a large mixing bowl, add the heavy whipping cream, confectioner's sugar, and pure vanilla extract. Whip with a hand mixer for 3-4 minutes until stiff peaks form.
  • Spread the whipped cream over the top of the pie crumbled cookies. Top the pie with some whole Biscoff cookies, a few crumbled cookies, and a drizzle of maple syrup. Serve chilled.

We have to admit, beans is probably one of our favorite foods! If we were stranded on an island with only one thing left to eat, then beans and peanut butter would be a close tie! Sweet brown sugar and molasses are combined with tangy sour cream to provide a rich and decadent sauce. Dried lima beans provide a heartiness that could definitely feed a whole crowd. We know…the name “lima beans” can be a little off-putting. That’s why we prefer to call them “butter beans”. However, dried lima beans are definitely for anyone who loves beans! Like gigante beans, they are an oversized bean that’s full of flavor. We do suggest brining the beans overnight in order to cook the beans more evenly. Also, we hear it helps to keep the bean skins intact while cooking. Therefore, eat more large beans and stay fabulous!

Ingredients

  • 1 lb dried lima beans
  • 2 quarts water
  • ½ cup butter
  • ½ cup dark brown sugar
  • ¼ cup molasses
  • 1 cup sour cream
  • ½ onion diced
  • 1 tbsp powdered mustard
  • 1 tsp kosher salt
  • ¼ tsp black pepper
  • 5 slices thick cut bacon cut into 1" pieces

Instructions

To Brine the Lima Beans

  • Combine the dried lima beans with 3 quarts cold water and 3 tbsp salt in a large pot. Cover and allow the beans to soak overnight at room temperature.

To Cook the Beans

  • Drain and rinse the beans and return to the pot. Add 2 cups of cold water and bring to a boil. Once the beans have come to a boil, reduce the heat to medium-low and simmer for 40-45 minutes until tender.
  • While the beans are cooking, combine butter, brown sugar, molasses, sour cream, onion, mustard, salt, and pepper in a medium nonstick saucepan. Cook over medium heat until all the sugar has melted and the ingredients have combined completely. Remove from heat and set aside.

To Assemble the Casserole

  • Drain the cooked beans and add to a 2 quart casserole dish. Pour the reserved sauce over the top of the beans and carefully stir. Top the beans with the sliced pieces of bacon.
  • Cover the beans with aluminum foil and bake at 275°F for 30 minutes. Remove the aluminum foil after 10 minutes of cooking. If you prefer to have a crispy bacon topping (like we do!), then cook the beans under a broiler for an additional 5-10 minutes until the bacon is crispy.

It’s definitely slow cooker season around our house now! This is probably one of the easiest recipes that we’ve ever cooked before as well. This Italian Roast Beef Sandwich recipe is actually our version of a sandwich that we grew up eating. There was a pizza parlor called Art’s Pizza that had THE BEST roast beef sandwiches ever! Thinly sliced roast beef was cooked in a spicy tomato based sauce. However, the best part of the sandwich was probably the bread. Why the bread you ask? Well, it’s simple. A good crusty bread will soak up all of that spicy and delicious beef broth! Although we don’t get to this restaurant much anymore, we always make a big pot of this delicious roast beef whenever we’re wanting the tastes from home. If you’ve ever been to the Hoosier state before, then you’ve probably had a slice of this sweet and creamy dessert. Indiana Sugar Cream Pie is a staple in the frozen section of every grocery store there. However, did you know that it’s incredibly easy to make? Using a few simple ingredients, this traditional pie serves as an amazing base for almost any dessert. We actually enjoyed our pie with a simple blackberry compote. However, the simple vanilla flavors will blend beautifully with almost any fruit. The pie is traditionally served warm, but we actually prefer our pie cold or room temperature. The texture of a chilled sugar cream pie is completely different and almost takes on a cheesecake consistency. Ingredients

  • ½ cup flour
  • 1 cup sugar
  • 1 tsp salt
  • 2 cups heavy cream

  • 1 frozen deep dish pie crust thawed

Instructions

  • In a large mixing bowl, sift together flour, sugar, and salt. Set aside.
  • In a nonstick medium saucepan, heat the heavy cream and butter (but do not boil). When the cream is hot, carefully pour the cream into the sugar mixture. Stir the mixture until all of the sugar has dissolved. Place the cream mixture into the freezer for approximately 20 minutes, stirring occasionally, until it has cooled completely.
  • Pour the cooled cream mixture into the thawed pie crust. Being careful not to spill the cream mixture out of the pie, transfer to a preheated oven and bake for 425°F for 15 minutes.
  • Reduce the oven temperature to 350°F and bake an additional 50 minutes.* Remove pie from oven and allow to cool in the fridge for at least 1 hour before serving.

Notes

In order to keep the crust from burning, create a ring of aluminum foil to cover the crust during the last 50 minutes of baking.
