Now that fall is here, this wonderful trifecta of flavor tastes great in almost any dish. However, having to decide where to utilize those flavors can be a little daunting. What better way to implement those flavors than with a sweet and savory egg roll? What we love most about egg rolls is that they can be used at any point in a dinner. They make great appetizers, side dishes, and even main dishes if they are hearty enough. Bacon, Apple, and Caramelized Onion Egg Rolls are definitely hearty enough to fill up any belly at the dinner table. Sweet and savory egg rolls are just the ticket to a delicious homemade treat for the newly cool nights at home. Eat more egg rolls and stay fabulous!

Ingredients

  • 1 tbsp extra virgin olive oil
  • ½ lb bacon chopped into 1" pieces
  • 3-4 small gala apples peeled, cored, and diced
  • 1 onion diced
  • ¼ cup apple cider
  • 2 tbsp apple cider vinegar
  • 3 cups cole slaw mix
  • 12 egg roll wrappers
  • salt and pepper

Instructions

  • Preheat oven to 400°F.
  • In a large nonstick skillet, heat extra virgin olive oil over medium heat. Add the chopped bacon and cook for 7-10 minutes, stirring occasionally, until browned all over. Transfer the cooked bacon to a paper towel lined plate and set aside.
  • Add the diced onion and apples to the skillet and cook over medium heat for 10 minutes until softened. Return the cooked bacon to the skillet and add the cole slaw mix, apple cider, and apple cider vinegar. Season with salt and pepper and cook uncovered for 10 minutes until the cole slaw mix has cooked and the liquid has evaporated. Remove from heat.
  • To assemble the egg rolls, lay an egg roll wrapper on your cutting board and place approximately ¼ cup of the cabbage mixture in the center. Fold up the bottom corner, fold in the sides, and then roll the egg roll like a burrito.* Place the egg roll seam side down on an aluminum foil lined baking sheet coated with cooking spray.
  • After all egg rolls have been assembled, spray the tops of the egg rolls with additional cooking spray. Bake in the preheated oven for 20-25 minutes until golden in color. Eat fabulously!

Hot Apple Honey and Sage Cocktail

Fall is finally here and so are all of those fabulous fall flavors! This weekend we’re definitely whipping out the big tastes with an apple, honey, and sage flavored cocktail. Now, those flavors are good enough for a warm hot toddy. However, we decided to top this hot cocktail off with some Jack Daniel’s Tennessee Honey. If you’ve never had this whiskey before, then you don’t know what you’re missing. It blends so beautifully with this cocktail that you almost can’t even taste the alcohol in it. Notice that we said “almost”. First we took fresh apple cider mulled with traditional mulling spices. Then, we amped up the flavor with some fresh sage leaves from the garden for some extra earthiness. We hope you enjoy this cocktail just as much as we did! Drink more apples and stay fabulous!

Ingredients

  • 4 cups apple cider
  • 1 tbsp mulling spices
  • 8 leaves fresh sage
  • 8 oz Jack Daniel's Tennessee Honey Whiskey

Instructions

  • In a medium saucepan, combine apple cider, mulling spices, and fresh sage leaves. Warm the cider over medium low heat for approximately 20 minutes.
  • Pour the cider through a fine mesh strainer into a pouring container.
  • For each drink combine 2 oz Jack Daniel's Tennessee Honey with 8 oz mulled cider blend. Serve warm.

Easy Fluffy Apple Butter Dessert Dip

Well, it’s official. We just can’t get enough fall flavors around the house at at the moment. Apple, pumpkin, cinnamon…take your pick. In an effort to appease a sweet tooth, enter Fluffy Apple Butter Dip into the picture. This easy dessert dip seriously only requires FOUR ingredients! Vanilla pudding, apple butter, whipped topping, and apple pie spice are both easy and budget friendly ingredients to work with. Therefore, you can spend less time fixing and more time eating! That’s always a plus for us during those busy work nights. Also, if you feel like sharing, this dessert dip is a yummy and easy dessert treat to make for a small group of friends. However you choose to enjoy this apple spiced dip, make sure that you have the right dipping foods. Fresh apple slices, grapes, and cookies are all great options. (Our favorite is Lotus Biscoff Cookies). Eat more apple stuff and stay fabulous!

Ingredients

  • 1 oz fat-free sugar free vanilla pudding mix
  • ½ cup apple butter
  • 8 oz fat free whipped topping
  • tsp apple pie spice

Instructions

  • In a medium mixing bowl, stir together pudding mix, apple butter, and apple pie spice until completely combined.
  • Fold the fat free whipped topping into the apple butter mixture. Fold for approximately 2 minutes until all of the ingredients are combined.
  • Cover and chill for at least one hour before serving. Serve with fresh apple slices, cooking, or our favorite…Lotus Biscoff Cookies! Yum!
