Ahhh…sorghum butter. Is there any flavor that could be classified as more Southern? Well, actually there’s a lot of flavors that can be classified as Southern, but this has to be one of our favorites. These melt in your mouth shortbread cookies are great to serve as an appetizer, with a cup of coffee, or just to nibble on during the afternoon. Not only are they bursting with sweet sorghum flavor, but they’re incredibly easy to make as well. Just whip together a few ingredients in a mixing bowl, chill, and bake. It’s that simple. However, make sure that you have a little bit of time for the dough to chill in the refrigerator for at least an hour. These sweet sorghum butter shortbread cookies are sure to be the next hit for your family or friends!

Sorghum is definitely the key ingredient in these Sweet Sorghum Butter Shortbread Cookies! However, you might be asking yourself…what the heck is sorghum? Well, sorghum syrup is very similar to molasses and honey. It has a thick texture that is very concentrated on sweet flavor. However, it has a bit of a tart kick to it. So, although the texture if similar to other syrups, the flavor definitely stands out on its own! Stay fabulous!

Ingredients

  • 8 tbsp unsalted butter room temperature
  • 3 tbsp sorghum
  • ½ tsp pure vanilla extract
  • ½ cup confectioner's sugar
  • cup flour
  • ½ tsp kosher salt

Instructions

  • Combine butter, sorghum, and vanilla in the bowl of a stand mixer. Blend together over medium speed for 30-60 seconds until completely combined.
  • With the mixer running at low speed, slowly add the confectioner's sugar, flour, and salt. Allow the mixer to blend all the ingredients for at least 60 seconds until a thick dough has formed. Scrape down the sides of the bowl to ensure that all ingredients are combined.
  • Transfer the dough to a piece of plastic wrap. Roll the dough into a flattened rectangular shape. Transfer to the refrigerator to cool for at least one hour.
  • After the dough has chilled, unwrap the dough and slice into ½" cookies and transfer to a baking pan with parchment paper (or silicone baking mat). Use the tines on a fork to make decorative indentations on top of the cookie dough. Bake in a preheated oven at 350°F for 10 minutes. Transfer to a wire rack to cool. Eat fabulously with some coffee or tea!

Sweet & Tangy Baked Butter Beans Casserole

We have to admit, beans is probably one of our favorite foods! If we were stranded on an island with only one thing left to eat, then beans and peanut butter would be a close tie! (Stay tuned for a peanut butter and beans recipe). HA! However, if you’re looking for something delicious to eat tonight, then Baked Butter Beans Casserole is it! Sweet brown sugar and molasses are combined with tangy sour cream to provide a rich and decadent sauce. Dried lima beans provide a heartiness that could definitely feed a whole crowd. We know…the name “lima beans” can be a little off-putting. That’s why we prefer to call them “butter beans”. However, dried lima beans are definitely for anyone who loves beans! Like gigante beans, they are an oversized bean that’s full of flavor. We do suggest brining the beans overnight in order to cook the beans more evenly. Also, we hear it helps to keep the bean skins intact while cooking. Therefore, eat more large beans and stay fabulous!

Ingredients

  • 1 lb dried lima beans
  • 2 quarts water
  • ½ cup butter
  • ½ cup dark brown sugar
  • ¼ cup molasses
  • 1 cup sour cream
  • ½ onion diced
  • 1 tbsp powdered mustard
  • 1 tsp kosher salt
  • ¼ tsp black pepper
  • 5 slices thick cut bacon cut into 1" pieces

Instructions

To Brine the Lima Beans

  • Combine the dried lima beans with 3 quarts cold water and 3 tbsp salt in a large pot. Cover and allow the beans to soak overnight at room temperature.

To Cook the Beans

  • Drain and rinse the beans and return to the pot. Add 2 cups of cold water and bring to a boil. Once the beans have come to a boil, reduce the heat to medium-low and simmer for 40-45 minutes until tender.
  • While the beans are cooking, combine butter, brown sugar, molasses, sour cream, onion, mustard, salt, and pepper in a medium nonstick saucepan. Cook over medium heat until all the sugar has melted and the ingredients have combined completely. Remove from heat and set aside.

To Assemble the Casserole

  • Drain the cooked beans and add to a 2 quart casserole dish. Pour the reserved sauce over the top of the beans and carefully stir. Top the beans with the sliced pieces of bacon.
  • Cover the beans with aluminum foil and bake at 275°F for 30 minutes. Remove the aluminum foil after 10 minutes of cooking. If you prefer to have a crispy bacon topping (like we do!), then cook the beans under a broiler for an additional 5-10 minutes until the bacon is crispy.

Vanilla pudding, apple butter, whipped topping, and apple pie spice are both easy and budget friendly ingredients to work with. Therefore, you can spend less time fixing and more time eating! That’s always a plus for us during those busy work nights. Also, if you feel like sharing, this dessert dip is a yummy and easy dessert treat to make for a small group of friends. However you choose to enjoy this apple spiced dip, make sure that you have the right dipping foods. Fresh apple slices, grapes, and cookies are all great options. (Our favorite is Lotus Biscoff Cookies). Eat more apple stuff and stay fabulous!

Ingredients

  • 1 oz fat-free sugar free vanilla pudding mix
  • ½ cup apple butter
  • 8 oz fat free whipped topping
  • tsp apple pie spice

Instructions

  • In a medium mixing bowl, stir together pudding mix, apple butter, and apple pie spice until completely combined.
  • Fold the fat free whipped topping into the apple butter mixture. Fold for approximately 2 minutes until all of the ingredients are combined.
  • Cover and chill for at least one hour before serving. Serve with fresh apple slices, cooking, or our favorite…Lotus Biscoff Cookies! Yum!
