Sweet & Tangy Baked Butter Beans Casserole

We have to admit, beans is probably one of our favorite foods! If we were stranded on an island with only one thing left to eat, then beans and peanut butter would be a close tie! (Stay tuned for a peanut butter and beans recipe). HA! However, if you’re looking for something delicious to eat tonight, then Baked Butter Beans Casserole is it! Sweet brown sugar and molasses are combined with tangy sour cream to provide a rich and decadent sauce. Dried lima beans provide a heartiness that could definitely feed a whole crowd. We know…the name “lima beans” can be a little off-putting. That’s why we prefer to call them “butter beans”. However, dried lima beans are definitely for anyone who loves beans! Like gigante beans, they are an oversized bean that’s full of flavor. We do suggest brining the beans overnight in order to cook the beans more evenly. Also, we hear it helps to keep the bean skins intact while cooking. Therefore, eat more large beans and stay fabulous!

Ingredients

  • 1 lb dried lima beans
  • 2 quarts water
  • ½ cup butter
  • ½ cup dark brown sugar
  • ¼ cup molasses
  • 1 cup sour cream
  • ½ onion diced
  • 1 tbsp powdered mustard
  • 1 tsp kosher salt
  • ¼ tsp black pepper
  • 5 slices thick cut bacon cut into 1" pieces

Instructions

To Brine the Lima Beans

  • Combine the dried lima beans with 3 quarts cold water and 3 tbsp salt in a large pot. Cover and allow the beans to soak overnight at room temperature.

To Cook the Beans

  • Drain and rinse the beans and return to the pot. Add 2 cups of cold water and bring to a boil. Once the beans have come to a boil, reduce the heat to medium-low and simmer for 40-45 minutes until tender.
  • While the beans are cooking, combine butter, brown sugar, molasses, sour cream, onion, mustard, salt, and pepper in a medium nonstick saucepan. Cook over medium heat until all the sugar has melted and the ingredients have combined completely. Remove from heat and set aside.

To Assemble the Casserole

  • Drain the cooked beans and add to a 2 quart casserole dish. Pour the reserved sauce over the top of the beans and carefully stir. Top the beans with the sliced pieces of bacon.
  • Cover the beans with aluminum foil and bake at 275°F for 30 minutes. Remove the aluminum foil after 10 minutes of cooking. If you prefer to have a crispy bacon topping (like we do!), then cook the beans under a broiler for an additional 5-10 minutes until the bacon is crispy.

Ingredients

  • 1 tbsp vegetable oil
  • lbs chicken breast tenderloins cut into 1" cubes
  • 20 oz frozen broccoli thawed and drained
  • 21 oz cream of chicken soup
  • 8 oz cream cheese softened
  • ¼ cup sour cream
  • 3 tbsp red curry paste
  • 1 cup chow mein noodles
  • 1 cup french fried onions
  • kosher salt and black pepper

Instructions

  • Preheat oven to 375°F.
  • In a large nonstick skillet, heat vegetable oil over medium heat. Add the diced chicken breast tenderloins and season with salt and pepper. Cover chicken and continue cooking, stirring occasionally, for 15-20 minutes until the chicken is cooked all the way through to 165°F. Remove from heat and set aside.
  • While the chicken is cooking, add cream of chicken soup, sour cream, cream cheese, and red curry paste to a medium saucepan. Cook over medium heat, stirring frequently, for approximately 15 minutes until cream cheese has melted and all ingredients are combined.
  • In a large mixing bowl, combine the cooked chicken, thawed broccoli florets, and red curry sauce. Toss all ingredients to combine and transfer to a 13×9 casserole dish. Set aside.
  • To make the noodle crumb topping, combine the chow mein noodles and french fried onions in a food processor and pulse until ground up. Top the casserole with the noodle crumb topping and cover with aluminum foil.
  • Bake for 30 minutes. Remove foil and bake an additional 5 minutes. Eat fabulously.
