Cool weather season is finally here! For us that means a few things. Sweater weather, pumpkin flavored everything, and stews! Easy Weeknight Beef Stew is definitely the ultimate choice when it comes to cool weather comfort food! What makes this delicious even more comforting…it’s so easy to make! Seared pieces of beef cooked alongside hearty pieces of potatoes and carrots in a rich broth will make the entire family happy this season. We prefer to use Yukon Gold potatoes in this recipe since they tend to hold up better under longer cooking conditions. However, any potato will work as well. If the potatoes happen to break down a little in the cooking process, it will just thicken it up even more. The key ingredient that we highly recommend using though is a decent quality red wine. We used a Cabernet Sauvignon that is rich and full bodied. However, since you only need to add a cup to the stew, that leaves you with a few glasses to enjoy WITH your meal! Ingredients

  • 3 tbsp extra virgin olive oil
  • 1 yellow onion diced
  • lbs beef stew meat
  • lbs Yukon Gold potatoes peeled and diced into 1" pieces
  • 8 oz peeled baby carrots chopped into ½" pieces
  • 4 cups beef stock
  • 1 cup red wine
  • 1 tsp dried thyme
  • 2 tsp kosher salt
  • 2 tbsp Worcestershire Sauce
  • ¼ cup cornstarch
  • salt and pepper for seasoning

Instructions

  • In an enamel coated cast iron dutch oven, heat 2 tbsp olive oil over medium high heat. Season the stew meat with salt and pepper. Add the meat to the hot oil and sear on all sides. Transfer to a bowl and set aside.
  • In the same pot, add the remaining 1 tbsp olive oil. Add the onions and cook for approximately 5 minutes until translucent. Return the seared beef to the pot. Add the diced potatoes, carrots, beef stock, wine, dried thyme, salt, and Worcestershire Sauce. Bring to a boil. Reduce heat to medium-low. Cover and simmer for 45 minutes.
  • Mix ¼ cup cornstarch with ¼ cup water. When completely blended, add the cornstarch "slurry" to the beef stew while stirring. Continue to cook the stew for an additional 10-15 minutes. Season to taste with additional salt and pepper if desired. Remove from heat and enjoy!

Vanilla pudding, apple butter, whipped topping, and apple pie spice are both easy and budget friendly ingredients to work with. Therefore, you can spend less time fixing and more time eating! That’s always a plus for us during those busy work nights. Also, if you feel like sharing, this dessert dip is a yummy and easy dessert treat to make for a small group of friends. However you choose to enjoy this apple spiced dip, make sure that you have the right dipping foods. Fresh apple slices, grapes, and cookies are all great options. Ingredients

  • 1 oz fat-free sugar free vanilla pudding mix
  • ½ cup apple butter
  • 8 oz fat free whipped topping
  • tsp apple pie spice

Instructions

  • In a medium mixing bowl, stir together pudding mix, apple butter, and apple pie spice until completely combined.
  • Fold the fat free whipped topping into the apple butter mixture. Fold for approximately 2 minutes until all of the ingredients are combined.
  • Cover and chill for at least one hour before serving. Serve with fresh apple slices, cooking, or our favorite…Lotus Biscoff Cookies! Yum!

I love a hard boiled egg! They can be eaten at any time of the day, and they are suprisingly easy to make. Also, since various weight loss programs have designated them a zero point food, they can be a great way to lose weight as well. However, nothing makes me more mad than losing half a hard boiled egg because it doesn’t want to peel correctly. Follow this method and the egg shells will easily slip away leaving most of your egg intact. Easy Peel Hard Boiled Eggs will be your next great snack or recipe addition!


Time needed: 30 minutes.

How to Make Easy Peel Boiled Eggs

  1. Boil water

    Bring a large pot of water to a complete and rolling boil.

  2. Add Eggs

    Using a ladle or slotted serving spoon, gently lower the eggs to the bottom of the pot being careful not to crack them.

  3. Boil Eggs

    Boil the eggs for 10 minutes.

  4. Drain Eggs

    Immediately drain the eggs and place them into an ice bath.

  5. Keep it Chill

    This is by far the most important step. Make sure that you let your cooked eggs chill in the ice water bath for at least 15 minutes.

  6. Peel and Enjoy

    Crack the egg shell and and peel away the membrane under cool running water.

  7. Store

    After all the eggs have been peeled, store in an airtight container in the fridge until ready to use.

Creamy Baked Chicken Alfredo

Cookbookie: It seems the most responsible thing to do these days is “social distancing”. In order to avoid going to the grocery store unnecessarily, sometimes we have to get a little more creative with the ingredients that we have on hand in our pantry. I whipped this little creation together this evening in an effort to try something warm, comforting, and TASTY! The addition of greek yogurt to the alfredo sauce provides an unexpected tanginess that’s quite enjoyable. I hope you like it!


  • 1 lb ckicken breast, sliced
  • 12 oz pasta (I used elbow macaroni)
  • 1 (15 oz) jar of Alfredo Sauce
  • 1/2 cup non-fat Greek yogurt
  • 1/2 cup low sodium chicken broth
  • 1 (12 oz) bag of frozen broccoli
  • 1/2 cup cracker crumbs
  • 1/2 cup traditional bread crumbs
  • 1/2 cup grated parmesan cheese
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 1 tsp Italian seasoning
  • 5 Tbsp Extra Virgin Olive Oil
  • Salt and Pepper
  1. Preheat oven to 375°.
  2. Add 1 Tbsp extra virgin olive oil to a nonstick kpan. Once the oil is heated, add the sliced chicken and season with salt and pepper.
  3. While the chicken is cooking, bring a large pot of water to a boil. Once the water has come to a boil, add salt to the water to season. Add the pasta and cook until a little less than al dente (5-6 mins for macaroni).
  4. Once the chicken is cooked all the way through, turn the heat off and set aside until ready to use. When the pasta has finished cooking, remove from heat and drain through a colander. Place pasta and cooked chicken back into the same pot the pasta was boiled in.
  5. Add alfredo sauce, greek yogurt, and frozen vegetables to the pot with pasta and chicken. Season with 1 tsp of ground black pepper. Stir.
  6. Add the pasta mixture to a prepared 13×9 casserole dish. In a seperate bowl, combine cracker crumbs, bread crumbs, parmesan cheese, onion powder, garlic powder, Italian seasoning, and 4 Tbsp olive oil. Stir to combine. Sprinkle the bread crumb/cheese mixture on top of the prepared casserole.
  7. Cover with foil and place casserole into the oven for 30 minutes. After 30 minutes, remove the foil and cook for an additional 5-7 minutes or until the crumb topping is golden in color.
