Cook 2 lbs ground chorizo in a nonstick skillet
Add chopped onion and green pepper. Cook until softened.
Mix together cornbread stuffing mix, cooked chorizo mixture, half the shredded cheese, and chicken stock.
Evenly spread cornbread stuffing and chorizo mixture in a prepared 13x9 casserole dish.
Sprinkle casserole with remaining shredded cheese. Cover with aluminum foil and bake at 350°F for 35 minutes.
