- 3-4 lbs pork loin
- 2 lbs Yukon Gold potatoes halved or quartered
- 1 yellow onion chopped into 1" pieces
- 8 oz peeled baby carrots
- 12 oz hard cider
- ½ cup apple butter
- 1 packet onion soup mix
- 10½ oz cream of mushroom soup
- 1 tsp kosher salt
- 1 tsp dried thyme
- ½ tsp black pepper
Layer the bottom of your slow cooker with the chopped potatoes, onions, and carrots. Place the pork loin on top of the vegetables.
In a mixing bowl, combine the hard cider, apple butter, onion soup mix, cream of mushroom soup, kosher salt, dried thyme, and black pepper. Whisk until all ingredients are combined.
Pour the hard cider mix over the top of the pork loin. Cover and cook on Low for 7-8 hours or High for 3-4 hours until the internal temperature of the pork registers 145°F on an instant read thermometer.
