Ingredients

  • 3-4 lbs pork loin
  • 2 lbs Yukon Gold potatoes halved or quartered
  • 1 yellow onion chopped into 1" pieces
  • 8 oz peeled baby carrots
  • 12 oz hard cider
  • ½ cup apple butter
  • 1 packet onion soup mix
  • 10½ oz cream of mushroom soup
  • 1 tsp kosher salt
  • 1 tsp dried thyme
  • ½ tsp black pepper

Instructions

  • Layer the bottom of your slow cooker with the chopped potatoes, onions, and carrots. Place the pork loin on top of the vegetables.
  • In a mixing bowl, combine the hard cider, apple butter, onion soup mix, cream of mushroom soup, kosher salt, dried thyme, and black pepper. Whisk until all ingredients are combined.
  • Pour the hard cider mix over the top of the pork loin. Cover and cook on Low for 7-8 hours or High for 3-4 hours until the internal temperature of the pork registers 145°F on an instant read thermometer.
